Thanks to the thinning of the clusters in spring, with careful selection, we obtain the highest quality of the grapes. The harvest is carried out strictly by hand. After the grapes are crushed and destemmed, the fermentation is carried out in stainless steel tanks at a controlled temperature. Then it passes the refinement in old French oak barrels for aging for at least 18 months, completed by a period of maturation in the bottle. This is a very long-lived wine, which can be appreciated even after 10 or 30 years of permanence in the bottle.
